E78 4 module Bain Marie is supplied standard with glass in the front and at each end. This acts as a sneeze guard and retains maximum heat without the use of lids. The Tungsten Heat Lamps above also act as a heat source and a display feature to help accentuate the colours of the food. The unit can be used as a wet or dry Bain Marie - we recommend to use a small amount of water to reduce the possibility of drying out the food.
